My husband and me both are very fond of
peanuts that I add it in all curries and upmas and almost every dish possible.
So i got to try the peanut rice today.
I am completely out of veggies today and could not go for the grocery purchase. So I came up with this rice. It is a one pot meal and the best when we do not have any vegetables at home. If you like peanuts then go for this. Can also be had as a lunch box recipe.
Ingredients :
Cooked Rice – 1cup
Cooked Rice – 1cup
Raw peanuts – ½ cup
Sesame seeds -1/4 cup
Dry Coconut – 4tsp
Red chillies – 4
Sesame Oil- 4 tsp
Mustard seeds – 1tsp
Urad dal – 1tsp
Method :
- Roast the peanuts, sesame seeds and red chillies separately.
- Add the roasted peanuts, sesame seeds, red chillies and dry coconut in the blender and grind them to a coarse paste.
- Heat oil in a pan. Add mustard seeds. Once they crackle, add urad dal. As soon as they turn golden brown add one red chilly (just break one and add it).
- Now add the rice and the coarse peanut powder.
- Mix well garnish with coriander and Serve hot with Papad.
My Notes :
- If you don’t have dry coconut, you can also try frying the fresh coconut after grating it.
- Also you can substitute sesame seeds for urad dal or chana dal.
Very simple and flavourful rice.. I personally feel that peanuts and sesame seeds are quite under-rated when compared to their counter parts..
