This is very easy one pot meal which can be made for morning hurries. I
generally make this on busy days and forget about the kitchen work until its
lunch time.. :) .
Salt – to taste
Ingredients :
(Serves two)
Basmati rice or Ordinary raw rice – 1 cup
Water – 1.5 cups
Onion – 1 Big
Carrot – 1 big
Cauliflower – 1 small floret
Green Beans or French Beans – 10
Potato – 1
Green peas (frozen or fresh ) – ¼ cup
Chopped coriander – ½ cup
Chopped mint leaves – ½ cup
Garam masala powder – 1tsp
Oil – 2tsp
Cumin seeds – 1tsp
Green chillies – 2
Chopped Ginger– 2 tsp
Garlic – 3 to 4 pods
Salt – to taste
Method :
- Chop the Onions and green chillies lengthwise .Soak the green peas for 3hrs.
- Cut all the remaining vegetables into bite size pieces.
- Soak the basmati rice in water for 10 mins.
- Now heat oil in a pan. Add cumin seeds. Once they crackle, add green chillies and ginger. Fry them and add Onions.
- Once onions change into a translucent colour, add the chopped coriander and mint leaves.
- Now add potatoes, carrots, beans , cauliflower and green peas. Fry for a couple of minutes. Then add garam masala.
- Drain the soaked rice and add it along with the vegetables.
- Fry the rice until it changes to slight golden colour.
- Now add 1.5 cups of water and transfer it to a pressure cooker or a rice cooker.
- If cooking in a pressure cooker, allow 2 whistles. Once the pressure subsides, open the cooker and fluff it with a fork so that the long grains don’t break off.
- Serve hot with raita or any gravy. We had Capsicum Gravy which I'm planning to post it sooner.
- We can also do this directly in a pan by adding 2 cups of water. Once the water starts to boil , add 1 cup of rice and then close it with a lid on medium flame.
- Keep stirring once in a while, as soon as water completely evaporates switch off and fluff it with a fork.
- We can add bay leaf, cloves and cinnamon for the masala flavour. I did not have them so I just added garam masala powder.
