Mixed Vegetable Curry


   I learnt this recipe from my friend, Mithan. This is one of her best recipes. This is a different variety of vegetable curry which can be had with chapatis or rotis.



We can also increase the gravier part and serve it as a vegetable sambar with rice. Here is the recipe.

Ingredients:

Baby Carrots – 8
Beans – 8 (in number)
Tomato – 2
Turmeric powder – a pinch
Red chilli powder – 1 tsp
Salt to taste

To be roasted and grinded:

Urad dal – 1tsp
Raw rice – 1tsp
Grated coconut – 2tsp
Cumin seeds – 1tsp
Methi seeds – ½ tsp






Method:
  • Take a pan and dry Roast urad dal, raw rice, cumin seeds and methi seeds one after the one. Let them cool.
  • Add the carrots, beans and tomato to a pressure cooker with salt, turmeric powder and chilli powder. Let off for 2 whistles.
  • Grind the roasted ingredients along with grated coconut. Add little water and grind it to a smooth paste.
  • Heat oil in a pan, add mustard seeds. Let them pop, add few curry leaves.
  • Once they are done, add the cooked vegetables from the cooker.
  • Now add the grinded paste. Let it boil for a few minutes until the gravy reaches\ a thick consistency.
  • Switch off the stove and garnish with coriander leaves.
  • Serve it for chapatti or roti or with rice.
